Bruce cut his teeth with Leith’s Catering (Pru Leith – Great British Menu) before starting his career in Michelin Stars Restaurants and Five Starred Hotels such as The mandarin Oriental Hyde park, The Dorchester, and The Waldorf. Working with chefs such as Gordon Ramsey Holdings, David Nichols, Anton Mosimann and Eric Vernice (The Bearfoot Bistro-Whistler).

He became the Director Chef at the Economist Newspaper group cooking for Guests including The White House, Business leaders, Top intellects and many of the UK Government both past and present.

He’s been a private chef for HNWI, working in villas, chalets and Super yachts and Mega yachts in France, Spain and Italy.

What is his speciality? Almost everything. Bruce has been trained at the Sushi Tokyo Academy and is highly experiences in Spanish, French, British, Pacific Fusion and Asian cuisine.

Over 25 year experience in creating foods and providing his skills for top-of-the-range venues to restaurants or Households.
